The harvest

From mid-October grapes are harvested at the same time taking advantage of the typical natural extreme temperature changes in Etna territory.
The sun beating on the terraced vineyards built on lava flows, decides the right ripeninig degree of grapes.

Vinification

Destemming is followed by 8/10 days of maceration in 30 hl thermo-scheduled vasts; aging in 30 hl oak barrels for 12 months.

Tasting notes

Deep ancient pink with light ruby red veins. On the nose raspberry, rose petals, cardamom. In mouth mineral, officinal herbs, white pepper. The finish is intense and sapid.
