A wine recalling the Sicilian tradition, deriving from the custom of filling barrels with new wine every year. The harvest takes place in mid- September. Our Perpetuo first vintage is 2005.

This wine, born from the annual filling of barrels of previous years with the new one, keeps the perpetual memory of a friend. Meditation wine, excellent with bottarga and spicy cheese.

Vinification
Trebbiano is left to dry in the sun for 10 days and vinified in cask. Cataratto, instead, is withered in cold store at 10°C for 30 days.
